High quality vinegar making is a result of a controlled process dependent upon a good grape juice and wine to start with. Like all that we do, we have focused on producing the best of the best. Our vinegar is made from our own grapes allowed to ferment out to dryness. At 6 months, the wine is innoculated and allowed to ferment an additional 6 months resulting in vinegars of truly amazing quality. See if you agree.
